Bourbon Chicken Recipe

On the menu this week for dinner was Bourbon Chicken. This dish has become a staple one in our home because it's so delicious and after you've made it a few times, it's easy to whip up. We hadn't had it in a while and our taste buds started to give us a hint that Bourbon Chicken needed to make its way back into my menu planning.

If you'd like to give this recipe a try, here's what you'll need:

2 lbs boneless chicken breasts, cut into bite-size pieces
• 1 -2 tablespoon olive oil
• 1 garlic clove, crushed
• 1/4 teaspoon ginger
• 3/4 teaspoon crushed red pepper flakes
• 1/4 cup apple juice
• 1/3 cup light brown sugar
• 2 tablespoons ketchup
• 1 tablespoon cider vinegar
• 1/2 cup water
• 1/3 cup soy sauce

I usually double the above ingredients because Dele likes extra sauce.

DIRECTIONS
Prep Time: 15 mins
Total Time: 35 mins

1.) Heat oil in a large skillet.
2.) Add chicken pieces and cook until lightly browned.
3.) Remove chicken.
4.) Add remaining ingredients, heating over medium heat until well mixed and dissolved.
5.) Add chicken and bring to a hard boil.
6.) Reduce heat and simmer for 20 minutes.
7.) Serve over hot rice {we used brown instead of white or fried rice}
8.) ENJOY!

*If you'd like to add cashews, like we do, heat them in a pan over medium heat for just a few minutes and then add them to the chicken, mixing until they are incorporated.
